| History The HACCP Consulting Group, (HCG), L.L.C. was founded in 1994 to assist the food industry (domestic and international) in the development, implementation and maintenance of food safety plans and systems (i.e., Hazard Analysis Critical Control Point-HACCP) mandated by the USDA, Food Safety and Inspection Service (FSIS), US Food and Drug Administration (FDA) and required by customers and consumers. HCG Professionals have expertise in Veterinary Science; Food Microbiology; Food Science and Technology; USDA/FDA Regulations, Inspection Procedures and Dispute Resolution; and, HACCP/GMP/SSOP training and conducting Food Safety Assessments in food processing establishments. Combined, HCG Professionals have over 170 years experience in the food industry and in FSIS and FDA to assist the industry in their every needs. HCG was one of the first companies to receive accreditation of its Basic and Advanced HACCP training materials by the International HAACCP Alliance and offers these courses in both English and Spanish. Additional training courses are also available for developing and implementing Good Manufacturing Practices (GMPs); Sanitation Standard Operating Procedures (SSOPs); Control of Listeria; Process Validation and Pathogen Interventions; and, Regulatory Enforcement Procedures. Domestically, HCG has provided food safety training and consulting services to hundreds of food processing and slaughter establishments to ensure compliance with applicable food safety regulations. In addition to the training courses mentioned above, consulting services have included, but have not been limited to, assisting establishments in the development, and implementation of food safety systems; conducting food safety assessments of existing food safety systems; investigating pathogen contamination (e.g., Listeria monocytogenes) of products; assisting companies in responding to regulatory and enforcement actions by FSIS/FDA; assisting companies in product recalls; conducting due-diligence audits of food establishments; providing assistance in the validation of processes; and, providing expert testimony at legal proceedings. Internationally, HCG has provided food safety training and consulting services in over 35 countries that export food produces to the US. Additionally, HCG has conducted food safety assessments of plants; provided HACCP and Regulatory for overseas inspection programs and companies; assisted countries in obtain equivalence to export to the US; and, assisted countries to regain their eligibility to export to the US. HCG is a long standing member of the National Meat Association, American Meat Institute, National Turkey Federation, National Chicken Council, Meat Import Council of America; North Carolina Meat Association; and, the U.S. Poultry and Egg Association. |
