Dr. Bryan Trout

Over 35 years, Dr. Trout dedicated his career to veterinary medicine, food safety, regulatory oversight, public health policy, and the advancement of preventive strategies in beef and pork slaughter operations.

Dr. Bryan Trout received a B.S. in Veterinary Medicine from the University of Nebraska (2007) and Doctor of Veterinary Medicine degree from Kansas State University (1988).  He spent 16 years in large animal practice, where is focus was on preventive herd health medicine with cow/calf production and feedlots.

Dr. Trout joined the USDA-FSIS in 2004 as an in-plant Public Health Veterinarian in a large cull cow slaughter operation.   In 2007, he transitioned to an Enforcement, Investigations, and Analysis Officer (EIAO) where he conducted food safety assessments in Nebraska.  In 2010, he was promoted to Supervisory EIAO in the Lawrence District and later the Springdale District. 

He supervised up to 16 EIAOs covering a four-state area.   In 2016, he was promoted to Senior Veterinary Medical Officer with the Office of Policy and Program Development.  His focus has been on beef and pork slaughter, raw beef sampling and Shiga Toxin producing E. coli (STEC) prevention strategies.  He retired from FSIS in 2025.  His regulatory background and policy experience brings a wealth of practical knowledge concerning beef and pork slaughter.
